Vinification Details: The grapes are harvested before being pressed immediately to retain freshness and to avoid any influence of tannins from the skins. After a period of cold settling, the must is fermented at low temperatures 14-17 degree C to further retain the delicate floral and fruity qualities. The wine is bottled with minimal ageing and ready to drink as fresh as possible.
History: Archeological discoveries from the ancient town of Tusculum, now Frascati, demonstrate the cultivation of grapes for wine since the 5th century B.C. it was one of the preferred wines of Ancient Rome.
Regional Information: The town of Frascati is a very small and historic town, in the hills south-east of Rome. The designated Frascati vineyard area extends beyond the commune of Frascati itself and takes in the vineyards of neighboring Grottaferrata and Monte Porzio Catone.
